Why we call this bonbon Jamaica

During spring, we released a limited bonbon collections that highlighted floral flavor profiles.  The collection included rose water saffron, lemon lavender, orange blossom with pistachio crust, and Jamaica (hibiscus tea).  

Our Jamaica bonbon is inspired by the Agua Fresca de Jamaica commonly served in Mexican households. Agua Fresca de Jamaica translates to Jamaican fresh water.   The drink originates from Jamaica and came to Mexico during the colonials time. 

To give ode to the drink, we make this in two different layers; our first layer is a Hibiscus jelly and the second layer is hibiscus caramel.  This combination still delivers the tartness that people are used to from the agua fresca and yet bright enough to punch through the chocolate.
